Here are some instructions on how to perform this if anyone else is interested in converting large data sets from Bruker spectra to ascii format for statisticians:

"we have this feature in Topspin for any command or even command sequence. The feature is called serial processing. And the command is called "serial". You build a dataset list (fairly easy and simple using a "find" function implemented in the workflow of the command serial" and then you simply define the command(s) you want to run and the run the serial processing."
Mike then provided me with an au program that can be used within the "find" command that takes all the ascii.txt files and deposits them in a central location with the spectral name.
So instead of having an ascii file within each spectral data directory of the format "spectrum name"/1/pdata/1/ ascii-spec.txt., you have a central directory with each ascii-spec.txt identified as "spectral name".txt.
