Dan,
This method is indeed often used in food quality assessment of liquid
products like wine, juices, etc. The pioneer in the technique is a French
researcher by the name of G. Martin. He also worked with M. Martin so I am
sure you will find papers from both of them. Here is one reference that I
have (of course, you will find many more from them and other researchers).
C. Guillou, G. Remaud, G. Martin. 1992. Applications of NMR to the
characterization and authentication of foods and beverages. Trends in Food
Science and Technology, August/September, 3, 197-201.
They also started a company called Eurofins Scientific in France and now in
the US. Here is the address of the company.
Eurofins Scientific, 2394 Route 130, Dayton, NJ 08810
Tel: 1877-EUROFINS
Fax: 1-732-329-1031
Email: EurofinsUS@Eurofins.com
Hope this helps.
Paul Cornillon.
